My favorite chocolate cake recipe

This has been my favorite chocolate cake recipe since I first discovered it when I was 9 years old and it has been my go to ever since. You ready for it? Try to keep up. It’s the recipe on the back of the Hershey’s cocoa powder can. It has a great chocolatey flavor and a light, bouncy sponge. It’s a winner.

I am slightly obsessed with a good cake sponge/crumb.

I cannot imagine making a cake without buttermilk but I go a little further with this one and I add sour cream to the buttermilk.

That’s right, I am putting dairy into dairy. There. Is. No. Stopping. Me.

Same rules apply to the eggs, milk and sour cream here folks, make sure that they are at room temp for better blending to get a better cake.

My favorite Chocolate Cake recipe (adapted from Hershey’s)

Pre heat oven to 350 degrees

In the bowl of a standing mixer add;

2 cups granulated sugar

1 3/4 cup cake flour

3/4 cup Hersheys cocoa powder

1 1/2 teaspoons baking soda

1 1/2 teaspoons baking powder

1 teaspoon salt

Using the whisk attachment, blend the dry ingredients together

In a liquid measuring cup, blend together

1 cup Buttermilk (at room temp)

2 Tablespoons sour cream (at room temp)

2 eggs (at room temp)

1/2 cup vegetable oil

2 teaspoons vanilla extract

Slowly add the egg mixture to the dry ingredients until well blended.

Once well combined, add 1 cup hot coffee or water. It’s up to you but I use coffee so you probably should as well.

Add the coffee to the batter and blend with the whisk attachment until well combined. (The batter will be thin)

Make sure to scrape down the bowl and pour evenly into either 3, 6 inch round or 2, 8 inch round cake pans sprayed generously with Pam with flour

Bake in a 350 degree oven for 25-30 minutes or when toothpick inserted comes out clean.

Let the cakes cool to the touch and take out of pans and let cool on a cooling rack. Once they are completely cooled off, wrap in cling wrap and keep in the fridge until ready to use. Preferably overnight, the cakes will work better for you and taste better.

I found this great cling wrap that is 100% compostable and it works great, so we are all winning.
